Mediterranean Cucumber Roll Ups


Yields approx. 12 rolls | Prep Time: 15 minutes

1 large cucumber 
1/8 tsp black pepper
6 tbsp roasted garlic hummus (or other flavor you prefer)
6 tbsp roasted red pepper, chopped
6 tbsp crumbled feta

1. Use a vegetable peeler to shave off long, thin slices of cucumber.  You could also cut the cucumber into thin slices using a knife.  Do not use the inside of the cucumber as to avoid seeds. 

2. Sprinkle each slice of cucumber with a pinch of black pepper.  Evenly spread a layer of hummus on each slice then top with chopped red pepper and feta crumbles.

3. Starting at one end, roll each slice around the filling and secure with a toothpick.  

Note: Don't attempt to roll the cucumber slices too tight or the filling will squeeze out.
