Avocado Chicken Salad

Yields 4 servings | Prep Time: 5 minutes

2 cups shredded Rotisserie chicken
1 medium avocado
1/2 cup chopped cilantro
Juice from 1/2 lime
1/4 tsp Kosher
1/4 ground black pepper
1 tbsp chopped fresh chives

1. Place all ingredients with exception of the chicken in a food processor.  Pulse until smooth.
2. Fold chicken into avocado mixture and chill in an airtight container.
3. Serve with pita, chips, crackers or as a sandwich.

**Note** Can be served immediately as well.
