Yields 4 servings | Prep Time: 5 minutes | Cook Time: 10 minutes
1 head of cauliflower, chopped into florets and steamed
1/2 tsp minced garlic
1/4 tsp pepper
1/4 Kosher salt
1/4 cup almond milk (more if too thick)
1/4 grated parmesan cheese
1 tbsp coconut oil
Chopped chives, for garnish (optional)
1. Puree cauliflower in food processor until whipped consistency. Add remaining ingredients and blend until smooth.
2. Serve and garnish as desired.
Note: You can easily make this vegan by omitting the Parmesan and adding 2 tbsp of nutritional yeast.
