Chicken Parm Meatballs


Yields approximately 20 meatballs | Prep Time: 20 minutes | Cook Time: 19-21 minutes

1 lb ground chicken or turkey
3/4 cup Italian breadcrumbs
1 cup grated Parmesan
3 garlic cloves, minced (3/4 tsp minced garlic)
1/2 tsp onion powder
1 cup tomato basil sauce (link to recipe)
2 Tbsp fresh or lightly dried basil, finely chopped
1/2 Tbsp dried Italian seasoning
1/2 tsp coarse salt
1/2 tsp black pepper
1 large egg, beaten
1 cup shredded mozzarella, for topping

1. Preheat oven to 350° F. Line a baking sheet with parchment paper.

2. Separate 2 tablespoons of marinara for the mixture and set aside the remaining along with the mozzarella for topping.

3. Combine the 2 tablespoons of marinara with the chicken, breadcrumbs, Parmesan, garlic, egg, basil, and seasonings in a bowl.

4. Roll the mixture into 1-inch balls and place evenly on the baking sheet. Bake 16-18 minutes.

5. Once baked, remove meatballs from the oven and turn oven temp to broil. Top each meatball with a spoonful of marinara then a pinch of shredded mozzarella. Broil on high for 2-3 minutes.

Note: I've made this recipe with ground turkey as well and it worked beautifully.
