  • Lasagna Soup

    A comfort food that is both brimming with flavor and healthy to boot. Jazz it up with your choice of toppings but ricotta is never a wrong move. Yields 6 servings | Prep Time: 15 minutes | Cook Time: 35 minutes | Total Time: 50 minutes 2 Tbsp olive oil, divided 1 lb ground chicken 1/2 large yellow onion, diced 2 tsp garlic, minced 4 1/2 cups low-sodium chicken broth 1 (14.5 oz) can petite diced tomatoes 1 (14.5 oz) can crushed tomatoes 2 1/2 Tbsp tomato paste 1 3/4 tsp dried basil 3/4 tsp dried oregano 1/2 tsp dried thyme Salt and ground black pepper, to taste To plate: 8 lasagna noodles, broken into bite size pieces 1 1/4 cups shredded mozzarella cheese 1/2 cup grated parmesan cheese 8 oz ricotta cheese (make it plain for this dish) Chopped fresh parsley, for garnish Directions 1. Heat one tablespoon olive oil in a large pot over medium-high heat. Cook the ground chicken until browned. Drain off fat set aside. 2. Heat remaining 1 Tbsp olive oil in pot, add chopped yellow onion and sauté until it begins to soften, about 3 minutes. Add in garlic and sauté 30 seconds longer. 3. Add in chicken broth, diced tomatoes, crushed tomatoes, tomato paste, basil, oregano, thyme, cooked ground chicken and season with salt and pepper to taste. 4. Bring just to a boil, then reduce heat to medium-low, cover and simmer 20 minutes. 5. Meanwhile, prepare lasagna noodles according to directions listed on package. 6. In a mixing bowl, using a fork, stir together mozzarella, parmesan and ricotta. 7. When ready to plate, add noodles and soup into a bowl and top with cheese mixture and chopped parsley. Note: Unless you intend on eating the whole pot of soup immediately, keep the soup, cheese mixture and noodles separate for storing. Soup can be refrigerated for up to 3 days.

    When Carolina met California, barbecue sauce was just a condiment. Now, it's a household staple... and we put it on EVERYTHING. Hands down the best barbecue sauce in the country (yes I said it). It's a "must"! Yields 8 servings | Prep Time: 5 minutes | Cook Time: 30 minutes 4 tbsp butter (dairy or plant-based) 1/2 cup mustard, yellow 1/2 cup apple cider vinegar 1/2 cup brown sugar 1 tbsp Mustard powder 1 tbsp onion powder 1 tsp salt 1/2 tsp cayenne pepper Directions 1. Melt the butter over low heat in a medium saucepan. 2. Add the remaining ingredients to the pan and cook, whisking occasionally, over low heat for 30 minutes. 3. Sauce will thicken slightly as it cools.

  • Spinach Lasagna

    This is one of three recipes from my Lasagna-Three-Ways. When you have a variety of dietary restrictions at the table, this is a surefire way to win. You might be surprised at who picks which as their favorite. Yields 12 servings | Prep Time: 25 minutes | Cook Time: 60 minutes For the filling: 2 tablespoons butter / coconut oil 1 tablespoon minced garlic 2 teaspoons minced fresh thyme 6 ounces fresh spinach 2 lbs ricotta cheese (I used Herbed Ricotta / Vegan Ricotta) 1 egg (omit for vegan option) 1/2 teaspoon salt 1/4 teaspoon nutmeg A squeeze of lemon juice (optional, to taste) For the lasagna: 12 no-boil lasagna noodles 24 oz tomato sauce (I used my Tomato Basil recipe) 2 cups shredded mozzarella cheese (optional for vegan - you can also use dairy-free shredded cheese) Directions 1. Melt the butter in a large skillet over medium heat. Add the garlic and thyme; sauté for 2-3 minutes. Add the spinach; sauté until just barely wilted, about 2 minutes. Remove from heat. 2. In a large bowl, combine the ricotta, egg, salt, nutmeg, and a squeeze of lemon juice. Add the spinach and stir to combine. Transfer some of the mixture to a food processor and pulse a few times to break up some of the spinach pieces (totally optional, but makes for a really nice texture). 3. Preheat the oven to 375 degrees. 4. Spread a little bit of tomato sauce in the bottom of a 9×13 pan. Layer with 3 lasagna noodles, 1/3 of the spinach mixture, 1/4 of the tomato sauce, and 1/4 of the cheese. Repeat and pour 1/2 cup water over the two layers. Repeat once more, ending with noodles, sauce, and cheese. Pour 1/2 cup water over the whole thing again and cover tightly with oiled foil. 5. Bake for 30-40 minutes; when the liquid is bubbling and the noodles have softened, remove the foil and bake uncovered for 10 more minutes. Let stand for 10-15 minutes before serving so that the lasagna noodles can soak up all the extra moisture. Note: You can make this the day before and refrigerate until ready to bake.

  • French Toast Soufflé

    Anyone who has a house full of guests needs a quick, easy, delicious breakfast that still tastes like you spent hours preparing it. Luckily, this twist on french toast can be made the day before and with little effort. Yields 12 servings | Prep Time: 15 minutes | Hold Time: Overnight + 30 minutes | Cook Time: 50 minutes 10 cups sturdy white bread (about 16 slices, cubed) Cooking spray 8 oz 1/3-less-fat-cream cheese, softened 8 large eggs 1 1/2 cups milk of choice 2/3 cup half-and-half 1/2 cup maple syrup 1/2 teaspoon vanilla extract For garnish: 2 tablespoons powdered sugar 3/4 cup maple syrup Directions 1. Place bread cubes in a 13 x 9-inch baking dish coated with cooking spray. Beat cream cheese at medium speed of mixer until smooth. 2. Add eggs, 1 at a time, mixing well after each addition. Add milk, half-and-half, 1/2 cup maple syrup, and vanilla, and mix until smooth. 3. Pour cream cheese mixture over top of bread; cover and refrigerate overnight. 4. Preheat oven to 375°. 5. Remove bread mixture from refrigerator; let stand on counter for 30 minutes. 6. Bake at 375° for 50 minutes or until set. Sprinkle the soufflé with powdered sugar, and serve with maple syrup.

  • Moroccan Spiced Flatbread

    We are bending the rules of flavor over here. With a beautiful array of middle eastern flair then jam packed into a healthy and refreshing flatbread, this one is truly Insta-worthy. Yields 2-4 servings | Prep Time: 15 minutes | Hold Time: 60 minutes | Cook Time: 20 minutes For the chicken/tofu: 1 lb boneless skinless chicken breast/or extra firm tofu 1 tbsp olive oil 1/4 plain greek/plant based yogurt 1 tsp paprika 1 tsp cumin 1 tsp salt 1/2 tsp ginger 1/4 tsp black pepper 1/4 tsp turmeric 1/4 tsp onion powder 1 tsp minced garlic 1tsp finely chopped parsley Wooden skewers For the flatbread (this is the creative part): Naan bread (store bought typically comes in packs of 2) 4-5 tbsp favorite hummus 1/4 cup feta/plant based feta Favorite toppings: Cherry tomato, red pepper, olive, arugula Directions 1. In a large bowl, mix olive oil, yogurt, paprika, cumin, salt, onion powder, ginger, black pepper, turmeric, minced garlic and parsley. 2. Add the chicken/tofu which has been cut into small pieces. 3. Mix all together to coat evenly in the marinade. 4. Cover and let it sit in the fridge for at least 60 minutes. 5. Place wooden skewers in warm water for about 20 minutes to avoid burning in the oven. 6. Preheat oven to 450°F. 7. Thread the pieces of chicken/tofu onto a skewer. Once the skewer is full, repeat with the other skewers until all the chicken/tofu is threaded.

  • PSL Cookie

    Nothing says sweater weather like pumpkin everything. So why not a cookie too? Put that annual spice blend to good use with these fluffy pumpkin pillows of goodness. Yields 20-24 cookies | Prep Time: 15 minutes | Cook Time: 18-20 minutes For the topping: 1/4 cup granulated sugar 1 1/4 tsp pumpkin pie spice For the cookie: 1/2 cup butter, softened (plant-based/margarine for vegan) 3/4 cup coconut sugar 1 tsp vanilla 2/3 cup canned pumpkin puree 3/4 cup all purpose flour 1 1/3 cup almond flour 1/3 cup cornstarch 2 tsp baking powder 1 1/2 tsp pumpkin pie spice 1/4 tsp salt Directions 1. Preheat oven to 350 degrees. 2. In a small bowl, combine the granulated sugar and pumpkin pie spice and whisk until evenly mixed. Set aside. 3. In a separate medium-sized bowl, combine butter, coconut sugar and vanilla and beat using an electric mixer until throughly mixed. Add the pumpkin puree and beat until light and fluffy. 4. Add remaining ingredients (flours, cornstarch, baking powder, pumpkin pie spice and salt) and beat with mixer on low until well combined. 5. Line a baking sheet with parchment paper. 6. One at a time, divide dough into tablespoon sized portions and roll between your hands to form a ball. The dough will be soft to be careful when forming. Roll each ball in the sugar/spice mixture and place, evenly spaced, on the baking sheet. 7. Using a flat bottomed glass or a spatula, press each cookie down gently to slightly flatten. 8. Bake for 18-20 minutes until puffy. Transfer to a wired cooling rack and allow to cool.

  • Orange Scented Gingerbread

    25+ years of hosting our annual family holiday get together centered around the decoration of little happy cookie men and we finally mastered this classic staple. All the ginger with a kiss of citrus. Yields 24 cookies | Prep Time: 60 minutes | Cook Time: 8 minutes 2 1/2 cups all-purpose flour 1 tbsp ground ginger 1 tsp baking soda 1/4 tsp ground cinnamon 1/4 tsp salt 3/4 cup packed light brown sugar 1/2 cup margarine, softened 1/4 cup Lyle's Golden Cane Syrup 2 tbsp molasses 1/4 cup unsweetened applesauce Zest of one orange Icing (optional): 1/2 cup powdered sugar 2 teaspoons unsweetened almond milk Directions 1. Spoon flour into measuring cup, then sift the flour into a bowl. Whisk in ginger, baking soda, cinnamon, and salt. Set aside. 2. Combine brown sugar and butter in a bowl. Beat with a mixer on medium for about 2 minutes or until fluffy. Add cane syrup, molasses and applesauce; beat another minute or until combine. 3. Add flour mixture into the wet ingredients, a little at a time, until just combined. 4. Fold/knead in orange zest. Flatten into a disc, wrap in plastic wrap and refrigerate for 30 minutes. 5. Preheat oven to 350° F. 6. Divide dough in half (I typically knead each half in my hands to ensure the zest is evenly distributed.) Roll each portion out on a floured surface with a rolling pin to about an 1/8 inch thick. 7. Use your favorite cookie cutters to create cookies and place on a parchment-lined cookie sheet about an inch apart. Bake 8 minutes. Once cooked, transfer immediately to a cooling rack and let cool if you plan on icing them. For the icing: 8. Mix powdered sugar and milk together in a bowl. Should be thick enough to put in a piping bag with a small round decorating tip. Pipe onto completely cooled cookies and let dry before storing or wrapping.

  • The Chocolate Chip Cookie

    Hang on to your nostalgia kids... this OG favorite is, by far, the best of the best. Soft and chewy... you won't be able to eat just one. Yields 10-12 cookies | Prep Time: 10 minutes | Cook Time: 11 minutes 1 1/2 cups all-purpose flour 1/2 tsp baking soda 1/2 cup white granulated sugar 1/4 cup packed light brown sugar 1/4 tsp salt 1/2 cup salted butter 1 tsp vanilla 1/4 cup unsweetened applesauce 3/4 cup chocolate chips Directions 1. Preheat oven to 350°. 2. Microwave butter until just barely beginning to melt, almost liquid form. 3. With an electric mixer, beat butter and sugars together until creamy. Add vanilla and unsweetened apple sauce and mix well until combined. 4. In a separate bowl mix flour, baking soda and salt together. Add the dry ingredients to the wet mixture and mix until crumbles begin to form. 5. Fold in the chocolate chips using a spatula. Roll the dough into 12 balls and evenly space them out on a parchment-lined cookie sheet. 6. Bake for 11 minutes until the cookies are puffy and golden brown. It is important not to over bake or else they won't stay soft and chewy. Note: Use dairy-free chocolate chips and plant-based butter or margarine for a completely vegan bite!

  • "Hot" Chocolate Drops

    These tasty morsels offer a little sugar, spice and everything nice all in one bite. Think spicy hot chocolate... but a cookie. Yields 24 cookies | Prep Time: 15 minutes | Cook Time: 10 minutes For the topping: 1/3 cup sugar 1 tsp cinnamon For the cookie: 1/2 canola oil (vegetable oil works too) 1/4 cup maple syrup 3 tbsp non-dairy milk 2 tsp vanilla 1 cup white granulated sugar 1 2/3 cups all-purpose flour 1/2 tsp baking soda 1/4 tsp salt 1/2 cup unsweetened cocoa powder 1/2 tsp cinnamon 1/2 tsp chili powder Directions 1. Combine sugar and cinnamon for the topping in a small bowl and set aside. 2. Preheat the oven to 350 degrees. 3. Add oil, syrup, milk, vanilla and sugar into a bowl and beat on medium with an electric mixer until well combined. 4. In a separate bowl mix flour, baking soda, salt, cocoa powder, cinnamon and chili powder together. Add the dry ingredients to the wet mixture and mix until crumbles begin to form. 5. Roll the dough into 1 inch balls then roll the dough balls in the topping to coat evenly. Space them out on a parchment-lined cookie sheet. Take a flat-bottomed glass (or spatula) and gently smush the dough balls into 1/4 inch thick discs. 6. Bake for 10 minutes. They should look cracked and sugary. Enjoy!

  • Inverted Chicken Parmesan

    A twist on an Italian classic... baked not fried... and without losing the crunch of the bite from topping with sauce. Yields 7-9oz | Prep Time: 5 minutes 4 boneless, skinless chicken breasts 4 tbsp Sun-dried Tomato Pesto (see recipe) 2 eggs, beaten 1 tbsp flour 1 cup plain Panko bread crumbs 1 cup grated Parmesan 2 tsp Italian Seasoning 1 cup shredded Mozzarella Lemon wedges, for garnish and light spritz Directions 1. Preheat oven to 400° F. Line a 9x13 casserole dish with foil and lightly oil to prevent sticking. 2. Using two bowls or shallow pans, whisk together flour and eggs in one bowl and Panko, Parmesan and Italian Seasoning in the second. 3. Apply a tbsp of pesto to the top of each chicken breast then dip in the flour/egg mixture, coating on both sides. 4. Then move the chicken to the bread crumbs mixture and coat well on both sides. 5.Line the chicken breasts in the oiled dish pesto side up. 6. Bake uncovered for 20-22mins. Remove from oven and turn the oven to broil on high. 7. Sprinkle a generous handful of mozzarella over the top of each breast. Pop the chicken back in the oven for about 2-3 minutes, watching to make sure it doesn't burn. 8. Garnish with a couple of lemon wedges.

  • Vegan Ceviche

    Step up your game by chopping up some vegetables and throwing a little citrus on top to complete this bright, beautiful summer side dish. Yields 6-8 servings | Prep Time: 15 minutes | Marinade Time: 60 minutes 2 cans hearts of palm, sliced 10 oz cherry tomatoes, halves (can use various colors) 1 jalapeño, seeded and diced 1/4 cup red onion, diced 1 garlic clove, minced 1 avocado, diced 2 Tbsp coconut milk (canned is preferable) Juice of 2 limes + zest Heavy pinch of salt Black Pepper to taste Directions 1. Combine hearts of palm, tomatoes, jalapeño, onion and garlic to a bowl. Mix to incorporate. 2. Fold in avocado, milk, lime juice and zest. 3. Finish off with salt and pepper, stirring a few more times until fully combine. 4. Marinade in the fridge for at least one hour before serving to allow all the flavors to fuse together. Note: This recipe is the best if left overnight to marinade.

  • Chocolate Quinoa Breakfast Bowl

    You've heard of oatmeal for breakfast but have you ever thought of quinoa as a morning protein boost? Yields 2 servings | Prep Time: 5 minutes | Cook Time: 20 minutes 1 cup uncooked quinoa 1/2 cup unsweetened almond milk 1/2 cup full fat coconut milk 1/4 tsp Kosher salt 1 tbsp pure maple syrup 1 tbsp unsweetened cocoa powder Optional: Handful of dark chocolate chips 1/2 banana, sliced Handful of berries Cinnamon, for garnish Directions 1. Combine almond and coconut milks in a saucepan and heat to a boil. 2. Once boiling, add salt and quinoa. Stir to combine. Turn heat down and simmer for about 10-15 mins (or when quinoa has soaked up all the milk,) stirring occasionally. 3. Remove from heat and add maple syrup and cocoa powder. Mix well. 4. Distribute quinoa from the saucepan into two bowls evenly. Add optional toppings... whatever makes you happy (shredded coconut, almonds, etc.) 5. Sprinkle with cinnamon and enjoy!

  • Spice Rubbed Pork Tenderloin

    With a simple sprinkle of spices and a pre-heated oven, this weeknight favorite will taste like you spent hours preparing. Yields 3-4 servings | Prep Time: 10 minutes | Cook Time: 40 minutes 1 whole pork tenderloin, trimmed of fat 1 tsp garlic powder 1 tsp onion powder 1 tsp paprika 1 tsp cumin 1 tsp ground mustard 3/4 tsp salt 3/4 tsp black pepper Directions 1. Preheat oven to 350°. Line a baking sheet with foil. 2. Combine all spices in a small bowl. Sprinkle the spice mixture over all sides of the tenderloin, patting it into the skin so as to use as much as possible. 3. Place tenderloin on the foil-lined baking sheet and bake, covered with foil for 30 minutes. Then remove the top layer of foil and allow to bake, uncovered, for an additional 10 mins. 4. Remove from oven and let rest for 5 minutes before slicing and serving. Note: This pork goes wonderfully with a delicious serving of Cauliflower Mash and your choice of steamed green.

  • Chicken and Caramelized Onion Empanadas

    These little Latin "moons" can serve as both entrees and finger foods and can even be made a head of time for quick week night meals. Yields 12-16 servings | Prep Time: 30 minutes | Cook Time: 30 minutes 1 lb chicken, cooked and shredded 1 yellow onion, diced 2 tbsp vegetable oil 1/2 tsp minced garlic 1 tsp paprika 1 tsp cumin 1 salt 1/2 tsp black pepper 1/4 tsp red chili powder 1 cup hot water 1 egg, beaten 2 packages of empanada dough, thawed (I use these) Directions 1. Preheat oven to 350°. Line a baking sheet with parchment paper. Making the Filling 2. In a large sauté pan, heat vegetable oil on medium heat. Add the onion and cook down, stirring occasionally, for about 15 minutes until soft and translucent. Add the garlic and cook another 30 seconds to 1 minute until garlic is fragrant. 3. Stir in shredded chicken and season with paprika, cumin, salt, pepper and red chili. Add water and bring to simmer, then cover and continue to simmer for about 5-10 minutes. Remove from heat, uncover and allow cool a few minutes. Stuffing Shells 4. Place one shell in the palm of your hand and scoop about 2 tablespoons of filling into the center of the shell. Fold shell over to close the shell, lining the edges up and squeezing the edges to seal completely. It will now look like a puffy half circle. (Note: Careful not to overfill the empanadas. You don't want the dough to break open.) Sealing the Empanadas The next step is fun and creative. In Argentina, there is no wrong way to seal an empanada but often times, the sealed edges are designed to distinguish fillings. This is what I call the "rope method". 5. With the empanada in one hand, take the one side of the half circle and place the edge between your thumb and index finger. While pressing your fingers together, turn the dough 180° toward the outer circle side of your empanada, as if you are flipping a piece of paper onto itself, let your index finger grab the new part of the edge, and press together to seal. Repeat until you've gone all the way around the circle. (Note: This should resemble the motions of winding up a toy with a little key) 6. Continue filling and sealing all the shells. If you're having trouble with the rope method, you can seal using the tines of a fork and pressing little grooves into the circle edge. Just make sure the edges are sealed to ensure the filling remains inside the dough while baking. 7. Brush each empanada with egg wash (beaten egg) and bake for 25-30 minutes, until golden brown. Note: If you'd like to make-ahead and freeze, freeze them before baking and avoid the egg wash until you're ready to bake. Use a plate or a baking sheet and place them in the freezer. Allow them to harden enough before tossing them in a sealable container for easier storage. They will keep in the freezer about 3 months. When you're ready to eat, place them directly on a lined baking sheet still frozen, brush with egg wash and cook a few extra minutes more than originally instructed at the same temperature.

  • Sun-Dried Tomato Pesto

    Whether using this as a condiment or as an ingredient for another recipe, it will be a beautiful, acidic addition your dish. Yields 7-9oz | Prep Time: 5 minutes 1 jar (7-9oz) oil packed sun dried tomatoes 1/4 cup of reserved oil (from the sun dried tomatoes) 1/2 tsp garlic, minced 1/4 cup pine nuts 1/4 cup fresh basil 1/4 cup grated Parmesan cheese Directions 1. Drain the tomatoes and reserve 1/4 cup of the oil. 2. Using a food processor, combine all ingredients for the pesto together and pulse until smooth. Add the olive oil a little at a time until you've reached your desired consistency (I tend to use the whole 1/4 cup.) Note: You can use the same jar from the tomatoes to store the pesto in the fridge for up to 2 weeks. You can also make it vegan by simply omitting the Parmesan and adding 1-2 tablespoons of nutritional yeast.
