Cauliflower Mash

A low carb alternative to the potato, cauliflower is a super power in the food world, taking on any form and flavor you deem it to be.


Yields 4 servings | Prep Time: 5 minutes | Cook Time: 10 minutes

1 head of cauliflower, chopped into florets 1/2 tsp minced garlic 1/4 tsp pepper 1/4 Kosher salt 1/4 cup almond milk (more if too thick) 1/4 grated parmesan cheese 1 tbsp coconut oil Chopped chives, for garnish (optional)

Directions


1. Steam the cauliflower florets for 10 mins or until you can pierce easily with a fork.

2. Puree cauliflower in food processor until whipped consistency. Add remaining ingredients and blend until smooth.

3. Garnish as desired and serve immediately.

Note: You can easily make this vegan by omitting the Parmesan and adding 2 tbsp of nutritional yeast.
