Spice Rubbed Pork Tenderloin

With a simple sprinkle of spices and a pre-heated oven, this weeknight favorite will taste like you spent hours preparing.



Yields 3-4 servings | Prep Time: 10 minutes | Cook Time: 40 minutes

1 whole pork tenderloin, trimmed of fat 1 tsp garlic powder 1 tsp onion powder 1 tsp paprika 1 tsp cumin 1 tsp ground mustard 3/4 tsp salt 3/4 tsp black pepper

Directions


1. Preheat oven to 350°. Line a baking sheet with foil.


2. Combine all spices in a small bowl. Sprinkle the spice mixture over all sides of the tenderloin, patting it into the skin so as to use as much as possible.


3. Place tenderloin on the foil-lined baking sheet and bake, covered with foil for 30 minutes. Then remove the top layer of foil and allow to bake, uncovered, for an additional 10 mins.


4. Remove from oven and let rest for 5 minutes before slicing and serving.


Note: This pork goes wonderfully with a delicious serving of Cauliflower Mash and your choice of steamed green.
